Spicy Seafood Ceviche

If you love SPICY food like me, you’ll definitely love this recipe. :)
This recipe makes a medium size bowl.
You’ll need the following ingredients:
- tomatoes
- onion
- seafood of your liking
- cilantro
- 1 tsp of salt
- 1 tbsp of sugar, 
- jalepeno
- tapatio sauce
- lime

I pretty much just eye-ball these ingredients to my liking. I like it really spicy. You can tone down the spice with some more sugar if it is too spicy for you.
Step by step instructions:
1) Chop the tomatoes and onion into small dices sizes.
2) Boil the shrimp and squid till it is fully cooked. Slice and dice them into small bits.
3) Chop cilantro up and mince the jalapeno.
4) Add all of the following into a bowl.
5) Add Tapatio sauce (depending on the level of spiciness you’d like) I usually add half of the bottle.
6) Add a teaspoon of salt and a tablespoon of sugar (more if it’s too spicy).
7) Cover the bowl and chill it in the refrigerator for at least 20 minutes.
8) Squeeze some lime on it before you eat!

Using the (All purpose wheat pizza dough) recipe from the previous post, I topped it off with some herbs, garlic, Parmesan cheese, mozzarella cheese, seasoned chicken breast, bacon bits after spreading KRAFT Spicy BBQ sauce on one side and Prego tomato sauce on the other.

All Purpose Healthy Whole Wheat Pizza Dough

I am a pizza lover. It is my weakness.. but I found a healthy way to still indulge ;)
To make wheat pizza dough, you’ll need the following ingredients:
- 1 packet of yeast or fast rise yeast
- 3/4 cup of warm water
- 1 1/2 tbsp olive oil or other heart healthy oil
- 1/2 tsp salt
- 1 1/4 cups of white flour
- 1 cup of whole wheat flour

step by step instructions
1. To make the crust, dissolve the yeast into the warm water.

2. Add oil and salt to that mixture.

3. Add the flours and knead them into the liquid mixture using a dough hook on your mixer, although you can knead it with your hands also.

4. Cover (after mixingand let dough rise in a warm place for 30-40 minutes.


5. After the dough has risen, place your pizza pan into the oven and preheat for 425 degrees F.



6. Take the risen dough and roll out into a 12″ pizza crust on a clean, floured countertop or cutting board.

7. Using your fingers, roll the edges into an outer crust. Make it as thick as you’ll like.
8. Lightly brush on some oil. (Add on your ingredients after.)

9. Bake your pizza at 425 for about 15 minutes or until crust is brown and crisp, but not too brown.

Garlic Herb Butter Rack of Lambs

- rack of lambs
- rosemary
- cilantro
- garlic
- olive oil
- kosher salt
- pepper


s t e p by s t e p


Before you start, pre-heat your own to 350 degrees.

1. chop up the herbs (cilantro, thyme, rosemary & garlic)

2. mix the herbs with olive oil.

3. shake some kosher salt and pepper all over the meat, front and back, then brush on the olive oil herb.

4. heat up your pan and wait for it to be hot, add olive oil, pan sear the lamb all around to add some brown color.

5. after searing, put the racks in the oven for 20 minutes. (your oven should already be preheated to 350)

6. when 20 minutes is up, take out the pan, let it sit for 5-10 minutes.


and...


VIOLA! Cooked to perfection! :)
